Description
The three varieties in this outstanding coffee have each been carefully chosen for their quality and blended together in just the right ratio to achieve a distinctive and satisfying flavour. Here is some further information about each one:
Indian
Full bodied, dry finish. Clove, tobacco, chocolate with a hint of ginger and spice.
Coffee in this region is commonly intercropped with pepper and/or cardamom, allowing farms to manage a balanced cashflow throughout the year. Basic amenities are provided to both full time and seasonal workers, with the former being more involved in pruning, fertilizing and general upkeep of the farm infrastructure outside of harvesting times.
Processing in India is commonly done with no fermentation to remove the mucilage. Cherry is picked, pulped, and sorted straight away, drying on patios under the sun unless weather or volume dictates the additional use of mechanical dryers.
South American
Our South American beans in this blend are usually from Brazil, the largest producer of coffee in the world. With such diversity, the range of coffee that it produces is vast – from smallholder farms to expansive estates. Soils, regional climate and temperatures make great growing conditions. However, Brazil lacks altitude – a factor considered crucial for creating the very best flavours expected from Arabica coffee and much of the coffee is grown at or below 1000m above sea level, much lower than the typical 1400m – 1800m that can be found in many other coffee producing nations.
Brazil has worked hard in recent years to promote itself as a sustainable producer, and global attention has forced various legislature through to enforce the protection of indigenous habitats and forestry. Many estates have taken this further and included substantial conservation areas on their estates. Typical flavouring from Brazil on the commercial grades invokes nuts, caramel and creamy body, but as producers develop new techniques, we are beginning to enjoy new-found sweetness, citrus and acidity from these coffees.
Papua New Guinea
Gentle body and mild acidity, with sweet and fruity flavours – rhubarb crumble with vanilla custard topping.
Grown at an altitude of 1600 metres, this coffee benefits from a combination of a local climate that is perfect for the growing of coffee, and a wealth of skills and knowledge of the local farmers who are key to having increased the quality of the crop to where it is today.
Coffee is a major industry for Papua New Guinea involving more than 2.5 million people (or nearly half of the total population). The crop remains the main source of income for many highland farmers, with the country exporting around 1 million bags of coffee annually.
We have then roasted these exceptional beans by hand in our own roastery to ensure that the finished product is as good as it can possibly be. It is then quality checked and then packed by hand in individual bags.
